A keystone is a precision wooden closure fitted into the keystone bush at the head of the cask. It forms a critical part of the cask conditioning and tapping process, providing the point where the tap is inserted when the cask is ready to serve.
Each keystone is manufactured from quality hardwood and features a partially pre-cut centre. This creates a controlled weak point that allows the tap to be driven through cleanly when the cask is tapped, while still maintaining a secure seal around the tap.
Designed to fit tightly within the keystone bush, wooden keystones help maintain pressure within the cask during conditioning and ensure a reliable seal until the beer is ready to be dispensed.
With the correct technique and experience, a cask can be tapped quickly and cleanly with minimal spillage, using either a traditional wooden or plastic tap.
